Produce Sourcing

The Bitter Science process starts with rescue. We actively seek out produce with no other path to market to make sure nothing goes to waste.

Fermentation

Then we go to work fermenting produce that would be discarded without intervention.

Triple Distillation

We triple distill the fermented fruit to create a 170-proof spirit.

Extraction

We use this spirit to extract the essence of gathered roots, seeds, berries, and leaves, then blend these extractions to design new and compelling combinations to embellish classic cocktails or inspire new creations.
